This Homemade Chipotle Ketchup is everything you have ever dreamed of. You know I absolutely love anything related to chipotle peppers, so I needed to make this Homemade Chipotle Ketchup. The chipotle peppers give the ketchup a nice smoky kick with a delicious spice. You can top this on eggs, burgers, fries and hot dogs.
I had been craving hamburgers and hotdogs for quite some time. So I made the most delicious Mushroom Burger. This burger paired so well with my Homemade Chipotle Ketchup. This ketchup will put store bought ketchup to shame, trust me. The longer you let it simmer, to thicker it will become. Simmer to your desired consistency.

Heat the oil in a medium saucepan over medium heat. Add the onion and cook for 5 minutes, until soft. Add the garlic and cook until fragrant, about 1 minute. Add the tomato puree, brown sugar, vinegar, chipotle chilies in adobo, salt, chili powder and stir to combine. Increase the heat to high heat and bring to a boil, then reduce the heat to medium low and simmer, stirring occasionally, for 45 minutes, until the sauce reaches a ketchup consistency.
