If you love Mexican food but always find yourself making the same tacos over and over again, this list is for you. These are 10 of my favorite Mexican recipes to make at home, from comforting classics like birria and gorditas to lighter dishes like calabacitas and Veracruz-style fish.
I grew up around Mexican food, and these are the kinds of recipes I come back to again and again. Some are traditional, some are inspired by dishes I grew up eating, and all of them are approachable enough to make at home.

They’re light, crunchy and just sweet enough, and they’re one of those recipes that always feels a little special without requiring a complicated ingredient list.
If you’ve never made homemade buñuelos before, this is a great place to start.
2. Stuffed Poblano Peppers

Poblano peppers are one of my favorite ingredients because they have so much flavor without being overwhelmingly spicy.

3. Calabacitas

Mexican Calabacitas is one of those simple Mexican dishes that proves vegetables do not have to be boring.
It’s traditionally made with zucchini, corn, peppers and other vegetables cooked together until tender. It’s fresh, colorful and incredibly versatile.
Serve it as a side dish, spoon it into tortillas, or add a protein and turn it into an easy dinner.
4. Gorditas with Maseca

If you love tacos, you need to try homemade gorditas.
Gorditas are made with masa and cooked until golden before being sliced open and filled with your favorite toppings. They’re thicker than tortillas, with a soft interior and slightly crisp exterior.
You can fill them with carne asada, chicken, beans, cheese, salsa or pretty much anything you have on hand.
Once you learn how easy they are to make, you’ll want to make them all the time.
5. Pork Birria Tacos

Birria tacos are rich, juicy and packed with chile flavor.
In this version, pork is slowly cooked in a deeply flavored sauce until tender enough to shred. The tortillas are dipped in the cooking liquid, filled with the meat and cooked until crispy.
Serve them with the broth on the side for dipping, plus onion, cilantro and lime.
They’re messy in the best possible way.
6. Discada

Mexican Discada is a Northern Mexican dish traditionally cooked outdoors on a large metal disc.
It usually includes a combination of meats, peppers, onions and spices all cooked together until everything is deeply browned and flavorful.
You don’t need the traditional disc to make it at home, though. A large skillet or griddle works perfectly.
Pile the mixture into warm tortillas and finish with salsa, cilantro and lime.
7. Veracruz-Style Mexican Fish

If you want something lighter, this Veracruz-style fish is one of my favorites.
The fish is cooked with tomatoes, peppers, olives and other bright ingredients that give it so much flavor without making the dish heavy.
It’s an easy seafood dinner that feels fresh and vibrant and goes perfectly with rice or warm tortillas.
This is a great Mexican recipe for anyone who wants something beyond tacos and enchiladas.
8. Mexican Cuernitos

Cuernitos are a classic Mexican pan dulce shaped like little horns.
They’re soft, slightly sweet and perfect with coffee or hot chocolate.
Making pan dulce at home takes a little more time than some of the savory recipes on this list, but it’s absolutely worth it.

9. Chicken Tinga

Chicken tinga is one of the best recipes to have in your back pocket.

It also makes amazing leftovers, which is always a win.
10. Chile de Árbol Salsa

Every good Mexican recipe collection needs a salsa.
This chile de árbol salsa is spicy, smoky and full of flavor. A little goes a long way, and it’s the kind of sauce that instantly makes tacos, eggs, grilled meat and even simple beans taste better.
If you like your salsa with some real heat, definitely make this one.
What Are the Best Mexican Recipes to Make at Home?
If you’re new to Mexican cooking, I’d start with chicken tinga, calabacitas or gorditas. They’re all approachable, use relatively simple ingredients and give you a great introduction to some of the flavors and techniques used in Mexican cooking.
If you want something impressive for a weekend, try birria tacos or discada. And if you have a sweet tooth, Mexican buñuelos and cuernitos are both worth making.
Mexican Recipes for a Complete Meal
You can also mix and match these recipes to build a full Mexican-inspired meal.
Start with gorditas or birria tacos as your main dish, add calabacitas on the side, and serve chile de árbol salsa at the table. Finish everything with warm buñuelos for dessert.
That is a dinner I would happily eat any day of the week.
