These Sausage Skewers Appetizers are made with sausage, red onion, limes, skewers and drenched in a garlic chili sauce.

Making sausage and lime skewers is great for when you have people over for a barbecue. All you really need are the three ingredients: onion, lime, and sausage. Using the homemade sauce is completely optional, but totally amazing for maximum flavor. Charring the lime on the grill actually makes the skin edible.

Ingredients
You'll only need a few simple ingredients to make this. The exact measurements are listed in the recipe card below. Here's an overview of what you'll need:
- Italian sausage
- Red onion
- Limes

- Garlic

Instructions
For the sauce: add the peppers, garlic, sugar, vinegar into a food processor or blender and process until smooth. Pour the mixture into a small pot and simmer for 10 minutes. Let cool and salt and pepper to taste.
Soak 10 8-inch skewers in water for about 15 minutes. Preheat the grill to medium high.
Thread the sausage, lime, and onion, alternating them.
When you finished threading all 10 skewers, using a basting brush and brush the homemade garlic chili sauce onto the skewers.
Grill the skewers and keep turning, until they char, about 10 minutes, flipping once halfway.
Squeeze lime onto the skewers if desired, and enjoy!
Hint: For the sauce, you could use garlic sriracha instead.
Substitutions
Sausage: I used Premio sausage for this recipe, and combined them to be hot and sweet sausage. You can mix and match anyway you would like.
Limes: I love adding grilled limes because you can take them out and squeeze onto the sausage. It is so delicious.
Chili sauce: I made a homemade chili sauce for this recipe, although if you prefer, you can use the Garlic Chili Sriracha sauce from the grocery store.
Onion: I used red onion, although you can opt to using white or yellow onion if you prefer.
Variations
Cooking is a chance to be creative! Have fun with it and feel free to make your own variation.
- Spicy - add chili pepper flakes in the sauce before basting.
- Deluxe - serve with Tzatziki dipping sauce.
- Kid friendly - serve on hot dog bun.
