Sausage and Lime Skewers

Description

This is great when you have people over for a barbecue. All you really need are the three ingredients: onion, lime, and sausage. Charring the lime on the grill actually makes the skin edible!


Ingredients

Sausage and lime skewers

  • 2 lbs of sausage, cut into 1 inch pieces
  • 1 large red onion, cut into chunks
  • 5 limes, quartered
  • 10 8-inch skewers

 

Sauce

  • 4 ounces spicy fresno peppers (take out the seeds)
  • 4 cloves garlic chopped
  • 1 tablespoon sugar
  • 2 tablespoons white vinegar
  • Salt and pepper to taste

Instructions

  1. For the sauce: add the peppers, garlic, sugar, vinegar into a food processor or blender and process until smooth. Pour the mixture into a small pot and simmer for 10 minutes. Let cool and salt and pepper to taste.
  2. Soak 10 8-inch skewers in water for about 15 minutes. Preheat the grill to medium high.
  3. Thread the sausage, lime, and onion, alternating them.
  4. When you finished threading all 10 skewers, using a basting brush, brush the homemade garlic chili sauce onto the skewers.
  5. Grill the skewers and keep turning, until they char, about 10 minutes.
  6. Squeeze lime onto the skewers if desired, and enjoy!
