How to make Greek Lamb Chops
Preheat the grill to high heat. Add the olive oil and the Greek oregano in a bowl and mix. Add the lamb chops and let them marinate for 30 minutes to 2 hours.
Grill the lamb chops for about 2 minutes each side to sear, 3 minutes each side for medium-rare and 4 minutes each side for medium. Anything more will be well done!
Add the mint and the olive oil in a blender. Squeeze in the lemon juice. Blend and serve on the side.
