This Air Fryer Bone Marrow is made with bone marrow, salt, pepper, parsley and air fried to perfection.

This Air Fryer Bone Marrow is so easy and can be made in under 15 minutes. The delicious buttery, rich and fatty bone marrow is everything you’ll ever need. The bone marrow can be eaten as is, or spread on the crusty bread. Sprinkle the bone marrow with a little bit of salt and nothing else. Bone marrow has so many benefits as it is a good fat. It is full of B vitamins, nutrients, and collagen which helps with your skin, bones and joints. The first time I tried bone marrow was at Minetta Tavern in NYC, and I couldn’t believe how good it was. I was curious to figure out how to make it myself, and it is so easy. People are easily intimidated by making it, but it’s honestly very simple.

If you have made Osso Buco ever, you know the middle bone of the veal shanks is basically bone marrow. You always need to eat the inside of it, and it is full of umami buttery flavors. I like having the bone marrow cut lengthwise as I find it easier to get the salt all over it. You can also make this with the cross cut bones an it works perfectly fine. Use the other end of the spoon or fork to pop the marrow out once you cook it.

  • Pepper
  • Parsley

See recipe card for quantities.

This Air Fryer Bone Marrow is made with bone marrow, salt, pepper, parsley and air fried to perfection.

Instructions

Preheat the air fryer to 450°F.

On a prepared baking sheet lined with parchment paper, place the bone marrow bone side down. Sprinkle with salt and roast in the air fryer for 15-20 minutes. Some fat will render from the bones. Take out of the air fryer and garnish with parsley and serve with crusty bread.

Hint: The marrow can be cut lengthwise or crosswise, about 1 inch thick. For lengthwise, bake in the air fryer at 450°F for 15-20 minutes. For crosswise, bake at the air fryer at 425°F for 20 minutes. Make sure to season with salt first. No need for any oil, as the marrow is already insanely fatty.

Substitutions

Bone Marrow: The marrow can be cut lengthwise or crosswise, about 1 inch thick. For lengthwise, roast in the air fryer at 450°F for 15-20 minutes. For crosswise, bake at the air fryer at 425°F for 20 minutes. Make sure to season with salt first. No need for any oil, as the marrow is already insanely fatty.

Salt: Season the marrow with salt, and if you want, pepper. I prefer using thick sea salt but kosher works as well.

Parsley: I love using a nice finish to plate the marrow so garnishing with parsley looks gorgeous. You could also use fresh thyme.

Variations

Cooking is a chance to be creative! Have fun with it and feel free to make your own variation.

  • Spicy - add chili pepper flakes on the bone marrow for some spicy action.
  • Deluxe - Serve with crusty bread and a side salad

Equipment

Equipment can have a big impact on how a recipe turns out. Stone bakeware takes longer to heat up than metal pans, and also retain heat for longer, which could make the recipe more watery, or burnt on the outsides.

Storage

This will be good in the refrigerator for 2-3 days.

These ingredients don't stand up well to freezing.
