Substitutions

  • Success Rice Boil-in-Bag Basmati Rice: You can opt for any fragrant Basmati rice or the creamy texture of Arborio rice.
  • Baby Bella Mushrooms: Feel free to substitute with the earthy flavors of cremini mushrooms, the classic button mushrooms, or the exotic touch of shiitake mushrooms.
  • Onion: Swap out with the delicate sweetness of shallots, the mild flavor of leeks, or the vibrant freshness of scallions.
  • Garlic: If you're out of fresh cloves, garlic powder or garlic paste can still infuse that wonderful aroma and flavor.
  • Fresh Parsley: Experiment with the herbaceous notes of fresh cilantro, the aromatic sweetness of basil, or the robust flavor of thyme.
  • Butter: Substitute with the rich nuttiness of margarine, the clarified essence of ghee, or the healthful drizzle of olive oil.
  • White Wine: If you prefer to skip the alcohol, enhance the dish with the depth of chicken or vegetable broth, the tang of apple cider vinegar, or the subtle sweetness of white grape juice.
  • Chicken Broth: Exchange for vegetable broth or simply use water infused with flavorful bouillon cubes for that savory base.
  • Cream Cheese: Indulge in the creamy richness of mascarpone cheese, the luscious texture of ricotta cheese, or the tangy bite of Greek yogurt.
  • Cream: Substitute with the silky smoothness of half-and-half, the lightness of milk, or the tropical sweetness of coconut cream.
  • Salt and Pepper: Customize with your preferred seasoning blend or elevate with aromatic herbs like rosemary or thyme.
  • Parmesan Cheese: Delight in the sharp tang of Pecorino Romano cheese, the nutty bite of Grana Padano cheese, or opt for nutritional yeast for a dairy-free alternative.

  • Spinach and Mushroom Risotto: Incorporate fresh baby spinach leaves during the last few minutes of cooking for added color, nutrition, and a delightful pop of freshness.
  • Sun-Dried Tomato and Mushroom Risotto: Stir in chopped sun-dried tomatoes along with the mushrooms for a burst of sweet and tangy flavor that compliments the earthiness of the mushrooms perfectly.
  • Wild Mushroom Risotto: Experiment with a mix of wild mushrooms such as chanterelles, morels, or porcini for a more complex and robust flavor profile.
  • Lemon and Herb Mushroom Risotto: Brighten up the dish with the zest and juice of a fresh lemon, along with a generous handful of chopped fresh herbs such as parsley, thyme, and chives for a vibrant and refreshing twist.

  • Prep Your Ingredients: Chop your onions, garlic, and mushrooms before you start cooking. This will ensure a smooth cooking process and prevent any last-minute scrambling.

The very BEST risotto I have ever had. I only had basmati rice and this recipe was even better. I will ever change this recipe for another. Spent 10 days at a cooking class at Casa Gregorio last September and this is still one of the best I have found.

Thank you so much! I’m so happy you loved it. Basmati is actually my favorite rice to use for this recipe too—I think the flavor and texture work so well here. So glad it was such a hit! 😊
