- 1 cup sliced baby bella mushrooms
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 2 tablespoons butter
- 1/4 cup white wine
- 1 cup vegetable or chicken broth
- 1 tablespoon cream cheese
- 2 tablespoons cream
- Salt and pepper to taste
- 1/4 cup parmesan cheese
Instructions
- Prepare the Success Boil-in-Bag Basmati Rice according to package instructions.
- In a large skillet or pan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 2-3 minutes.
- Add sliced mushrooms to the skillet. Cook until the mushrooms are tender and lightly browned, about 5-7 minutes. Add garlic and cook until fragrant.
- Pour in the white wine and cook for 2-3 minutes, allowing it to reduce slightly.
- Pour in the chicken broth and allow to simmer for 5 minutes.
- Stir in the cream cheese, cream and parmesan until well combined. Season with salt and pepper to taste.
- Add the Success Rice from the bag to the skillet. Stir well to combine with the mushroom mixture.
- Remove the skillet from the heat and stir in the chopped parsley.
- Serve the mushroom risotto hot, garnished with grated Parmesan cheese if desired.
