This Spinach Artichoke Pepper Jack Dip is made with baby spinach, artichokes, cream cheese, mayonnaise, and pepper jack cheese.
If you plan on having guests over and need to make a dip, you won’t strike out with this one! This appetizer is by far such a crowd pleaser – last time I made it everyone was crowding around my dip. I used fresh spinach and sautéed it for 2-4 minutes until well cooked. This dip is a mix of freshly cooked spinach, marinated artichokes, parmesan and pepper jack, all baked to perfection. You can never go wrong with adding another type of cheese too!

How to make Spinach Artichoke Pepper Jack Dip
Preheat the oven to 375°F.
Place the artichokes in a large bowl and smash them well with a fork and your hands, removing any tough leaves. IMPORTANT: Make sure you have squeezed out any excess liquid from the spinach with a clean towel. Add the spinach, pulling it apart with your hands. Add the cream cheese, mayonnaise, parmesan, pepper jack, chili powder and garlic and mix well with a wooden spoon.
Transfer the mixture into a cast iron skillet or a pie plate that has been sprayed with nonstick cooking spray.
Bake in the oven for 20 minutes.
Serve hot with chips or toast.
