Optional Cajun Dipping Sauce
- ¼ cup mayonnaise

Instructions
- Preheat the air fryer to 380°F if recommended for your model.
- Peel the sweet potatoes, if desired, and cut them into uniform ¼-inch-thick sticks.
- Pat the sweet potato sticks completely dry with paper towels or a clean kitchen towel.
- Place the fries in a large mixing bowl. Sprinkle the cornstarch over them and toss until they have a very thin, even coating with no large white patches.
- Spray the fries evenly with avocado or olive oil. Add the Cajun seasoning and smoked paprika, then toss until evenly coated.
- Arrange the fries in a single layer in the air fryer basket, leaving space between them. Cook in batches if necessary.
- Air-fry at 380°F for 12 to 16 minutes, flipping the fries or shaking the basket after approximately 7 minutes. Continue cooking until the centers are tender and the edges are browned and crisp.
- While the fries cook, make the optional dipping sauce. Whisk the mayonnaise, lime juice, Cajun seasoning, and hot sauce together in a small bowl until smooth.
- Transfer the fries to a serving plate. Immediately sprinkle them with flaky sea salt and freeze-dried chives. Serve hot with the Cajun dipping sauce, ketchup, or ranch.
