Description

This Keto Biscuit Recipe is made with almond flour, baking powder, heavy whipping creams, eggs and butter and baked to perfection.

Ingredients

Scale
  • 1 ½ cups finely ground blanched almond flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 3 tablespoons heavy whipping cream
  • 2 large eggs
  • 2 tablespoons salted butter, soft and melted

Instructions

  1. Preheat the oven to 400°F.
  2. In a mixing bowl, whisk together the dry ingredients: Almond flour, baking powder and salt. N another bowl, mix the wet ingredients, heavy cream, eggs, and melted butter. Pour the wet mixture into the dry ingredients and stir until well combined. Allow the batter to sit for 5 minutes.
  3. Grease a baking sheet with nonstick spray or place parchment paper on it. Drop the batter by the large spoonful onto the sprayed baking sheet, leaving about 2 inches between the biscuits.
  4. Bake for 10-14 minutes, until golden brown. Allow to cool inside the oven before taking it out.

Notes

  • You can use sour cream instead of heavy whipping cream as well.
  • Use Finely Ground Almond Flour: Opt for finely ground blanched almond flour to achieve a smoother texture in your biscuits. Coarser almond flour may result in a grainier texture.
  • Measure Ingredients Accurately: When baking, it's important to measure the ingredients accurately to ensure the right balance of flavors and textures. Use measuring cups and spoons for precise measurements.
  • Use Room Temperature Ingredients: Allow your eggs, heavy whipping cream, and butter to come to room temperature before using them. Room temperature ingredients mix together more evenly and result in a better-textured biscuit.
  • Don't Overmix the Dough: Overmixing the dough can lead to a denser texture. Mix the ingredients until just combined. It's okay if the dough is slightly lumpy or there are some streaks of butter visible.
  • Let the Dough Rest: Allow the biscuit dough to rest for a few minutes before shaping or portioning. This resting period helps the dry ingredients absorb the moisture and makes the dough easier to handle.
  • Use a Pastry Cutter or Fork to Incorporate Fats: When cutting in the butter or incorporating other fats into the dry ingredients, use a pastry cutter or fork. This helps create a crumbly texture and distributes the fats evenly.
  • Adjust Baking Time and Temperature: Baking times and temperatures can vary depending on your oven and the size of your biscuits. Keep an eye on them while baking and adjust the time or temperature as needed to achieve a golden brown color and a fully cooked interior.
  • Let the Biscuits Cool Before Storing: Allow the baked biscuits to cool completely before storing them. This helps them firm up and prevents excess moisture from accumulating in the storage container.
  • Reheat Properly: If reheating refrigerated or frozen biscuits, use an oven or toaster oven to help restore their texture and crispness. Microwave reheating may result in a softer texture.
  • Experiment with Flavors and Add-Ins: Don't be afraid to experiment with flavors and add-ins to customize your keto biscuits. Add herbs, spices, cheese, or even chopped cooked bacon for extra flavor and variety.
