Description

This Pasta Broccoli Garlic and Oil is made with garlic, chicken bouillon, broccoli, eggs, fettuccini, and parmesan.

Ingredients

Scale
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 cups chicken bouillon
  • 1 bunch broccoli, cut up into florets
  • 2 tablespoons butter
  • 2 egg yolks
  • 1 pound fettuccini, cooked
  • 1/2 cup grated parmesan cheese (or however much you want)

Instructions

  1. In a large deep pan, brown the garlic in olive oil. Add 3 cups of water and 3 bouillon cubes. Simmer water with garlic for 10 minutes.
  2. Add the broccoli florets and simmer for another 10 minutes until half of the water is evaporated. Cut the stems off of the broccoli.
  3. Add the cooked fettuccini, 2 egg yolks, 2 tablespoons butter, 1/2 cup grated parmesan cheese.
  4. Salt and pepper to taste. Mix and serve.

Notes

  • Make sure about half of the water evaporated by the time you add the pasta.
  • Make sure the pasta is still hot when you add the butter and eggs.
  • Cook the Pasta Al Dente: When boiling the pasta, cook it al dente, which means it should be cooked until it is firm to the bite. This helps to prevent the pasta from becoming mushy when combined with the other ingredients. Follow the package instructions for the recommended cooking time, but start testing the pasta a minute or two before the suggested time to ensure it is cooked to your desired texture.

  • Blanch Broccoli Properly: To ensure the broccoli is cooked to perfection, blanch it in boiling water or steam it until it is tender but still vibrant green. Avoid overcooking, as it can result in mushy broccoli. Once blanched, immediately transfer the broccoli to an ice bath to stop the cooking process and help retain its bright color.

  • Reserve Pasta Water: Before draining the cooked pasta, reserve some of the pasta cooking water. The starchy water can be used to adjust the consistency of the sauce or help bind the ingredients together. Add small amounts of the pasta water as needed while tossing the pasta and broccoli to achieve the desired consistency.

  • Sauté Garlic for Flavor: If you're incorporating garlic into your Pasta with Broccoli, sauté it in olive oil before adding the cooked pasta and broccoli. Sautéing the garlic in oil helps to release its flavors and aromas, enhancing the overall taste of the dish.

  • Use High-Quality Parmesan Cheese: Grate or shave fresh Parmesan cheese over the pasta just before serving. Opt for high-quality Parmesan for the best flavor. The nutty and savory notes of Parmesan complement the pasta and broccoli, adding richness to the dish.

  • Add a Sprinkle of Red Pepper Flakes: If you enjoy a touch of heat, consider sprinkling some red pepper flakes over the finished dish. This adds a subtle kick of spiciness and complements the flavors of the pasta and broccoli.

  • Customize with Toppings: Enhance your Pasta with Broccoli by adding additional toppings or garnishes. Freshly chopped herbs like basil or parsley can add a burst of freshness. You can also sprinkle toasted pine nuts or breadcrumbs for added texture and crunch.

  • Let It Rest: After combining the pasta, broccoli, and sauce, let the dish rest for a few minutes. This allows the flavors to meld together and ensures the pasta absorbs the sauce evenly.
