Description

This Easy Flat Lo Mein with Mushrooms and Bell Peppers is made with lo mein noodles, mushrooms, bell pepper, and stir fried. 


Ingredients

Noodles

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 8 oz lo mein flat egg noodles
  • 1 pound sliced mushrooms, button or shitake
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced

Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon light brown sugar
  • 1 tablespoon sesame oil
  • Juice of ½ lime

Instructions

  1. In a small bowl, whisk together the soy sauce, light brown sugar, sesame oil, and lime juice.
  2. In a large pot of boiling water, cook noodles according to package instructions and strain the noodles.
  3. Heat olive oil in a large skillet over medium high heat. Add the peppers, garlic, and mushrooms. Cook, stirring frequently, until soft, about 5-7 minutes. Stir in the sauce and the noodles, tossing to combine.
  4. Serve.
