- 1/3 cup extra-virgin olive oil
- 1 red bell pepper, seeded and thinly sliced
- 2 cups cherry tomatoes
- 2 garlic cloves, smashed
- 1 tablespoon oregano leaves
- 1 tablespoon balsamic vinegar
- 2 teaspoons honey
- Pinch of kosher salt
- 8 ounces burrata cheese
- Crackers or toasted bread, for serving
Instructions
- Preheat the oven to 400°F.
- In a small baking dish, add the olive oil, bell peppers, tomatoes, garlic, oregano, balsamic vinegar, honey and salt. Combined well and bake in the oven for 20-30 minutes, until the tomatoes are bursting and the pepper is soft.
- Remove the baking dish from the oven give the mixture a good stir. Make space in the middle of the dish and arrange the burrata in there.
- Cut the burrata open and serve with crackers or toasted bread.
