Description

This spicy crab salad combines lump crab, crisp cucumber, avocado and fresh herbs with a creamy sriracha-lime dressing. It’s fresh, high in protein and ready in 20 minutes.


Ingredients

Salad

  • 16 ounces lump crab meat, picked over for shells

  • 2 English cucumbers, thinly sliced

  • 2 scallions, sliced

  • ½ cup chopped cilantro

  • 1 jalapeño, finely diced, optional

  • 1 avocado, diced, optional

  • 1 tablespoon toasted sesame seeds

Dressing

  • ¼ cup nonfat Greek yogurt

  • 2 tablespoons Kewpie mayonnaise or light mayonnaise

  • 1 tablespoon sriracha, plus more to taste

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon toasted sesame oil

  • 1 teaspoon honey

  • 1 garlic clove, grated

  • 1 teaspoon grated fresh ginger

  • Juice of ½ lime

Garnish

  • Furikake

  • Crispy onions, optional

  • Extra sliced scallions

  • Chili crisp, optional


Instructions

  1. Whisk the Greek yogurt, mayonnaise, sriracha, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger and lime juice together until smooth.
  2. Add the cucumbers, scallions, cilantro, jalapeño and avocado to a large bowl.
  3. Gently fold in the lump crab meat, being careful not to break up the larger pieces.
  4. Pour the dressing over the salad and gently toss until everything is coated.
  5. Top with the sesame seeds, furikake, extra scallions and chili crisp. Add crispy onions immediately before serving.

Notes

  • Keep the dressing separate until shortly before serving so the cucumbers stay crisp.
  • Start with less sriracha for a mild salad. Add jalapeño and chili crisp for more heat.
  • Use tamari instead of soy sauce for a gluten-free version. Check the labels of all packaged toppings.
