Description

This Shrimp Scampi Recipe is made with shrimp, butter, broth, lemon juice, olive oil, red pepper flakes, parmesan and parsley.


Ingredients

  • 1 to 1.5 pounds of shrimp
  • 2 tablespoons of olive oil
  • 3 tablespoons of butter
  • 2 tablespoons of minced garlic
  • OPTIONAL: 1/3 cup white wine
  • 1 cup of broth, chicken or vegetable
  • 1/2 cup of real lemon juice
  • 1 teaspoon of red pepper flakes
  • 2 teaspoons of salt
  • 1/3 cup of parmesan
  • 1/3 cup of chopped parsley

Instructions

  1. Bring large pot to a boil and add salt. Cook the spaghetti according to package instructions.
  2. On medium heat, start by adding the Olive oil, garlic and butter on a large pan. Once the butter melts and the garlic browns, pour in the wine and wait for the wine to evaporate by half, about 6 minutes. (Skip this step if you aren't using white wine). Pour in the cup of broth, salt, lemon and red peppers.
  3. Let the mixture sizzle for about 2 minutes. Season the shrimp with salt and pepper and then add to the pan. Each side should cook for about 2-3 minutes or until the shrimp turns pink!
  4. Use tongs to help flip the shrimp over. Combine the pasta and the shrimp, with the sauce, together. Finally, garnish with parmesan and parsley!

Notes

  • Use fresh ingredients: Since shrimp scampi is a simple dish with few ingredients, it's important to use the freshest ingredients possible. Choose fresh, plump shrimp and use fresh garlic and lemon for the best flavor.
  • Don't overcook the shrimp: Overcooked shrimp can become rubbery and tough. Cook the shrimp just until they turn pink and start to curl, which usually takes only a few minutes.
