Description

This Pumpkin Bread Recipe with Raisins and Nuts is made with flour, pumpkin puree, cinnamon, butter, sugar, nuts, milk, vanilla, chocolate chips and sweetly baked.

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoons baking soda
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon kosher salt
  • 1 cup canned pure pumpkin puree
  • 1 stick unsalted butter, melted
  • ½ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1/3 cup crushed mixed nuts, I used Cranberry Healthy Trail mix by Nature’s Garden
  • 2 large eggs
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 350°F.
Lightly coat loaf pan with cooking spray. Line the pan with parchment paper, leaving a 2 inch longer overhang. Coat with more nonstick spray.
  2. In a large bowl, add the flour, baking powder, baking soda, cinnamon, and salt. Mix well then add the pumpkin, butter, sugars, eggs, milk, nuts and vanilla. Mix thoroughly.
  3. Pour the mixture into the prepared pan and then scatter the chocolate chips onto the bread.
  4. Bake for about 45 to 55 minutes, until a toothpick can come out clean that’s been inserted into the center.
  5. Cool the pan on a wire rack or the stove when baked, then use the parchment paper overhang to pull the bread out.

Notes

  • Use canned or homemade pumpkin puree: Pumpkin puree is the star ingredient in pumpkin bread, so using high-quality pumpkin puree can make a big difference in the flavor of your bread. You can use canned pumpkin puree or make your own by roasting and pureeing fresh pumpkin.
  • Use room temperature ingredients: Make sure your ingredients are at room temperature before mixing them together. This helps the ingredients to mix together evenly and ensures that your bread will bake evenly.
  • Use the right amount of leavening agents: Baking powder and baking soda are both leavening agents that help the bread rise. Make sure to measure out the correct amount of each and don't overdo it, as too much can cause the bread to collapse.
  • Don't overmix the batter: Overmixing the batter can lead to tough, dense bread. Mix the ingredients together just until they are combined, and avoid overmixing.
  • Add spices for extra flavor: Pumpkin bread is often made with spices like cinnamon, nutmeg, and ginger. Add these spices to your bread to give it a warm, cozy flavor.
  • Grease your loaf pan: Make sure to grease your loaf pan well with butter or cooking spray to prevent the bread from sticking to the pan.
