Description

This Fideuà Recipe dish is simple and you will need fideos, squids, shrimp, mussels, and vegetables.


Ingredients

  • 3 tablespoons olive oil
  • 1/2 pound of shrimp, cleaned and deveined
  • 1 pound mussels
  • 1/2 pound of squid rings
  • 2 cloves of garlic, minced
  • 1/2 onion, chopped
  • 1 bell pepper, diced
  • 1 tsp paprika
  • A pinch of saffron
  • 1 lb thick fideos or spaghetti cut into thirds
  • 6 cups hot fish or seafood stock
  • Lemon wedges, for serving

Instructions

  1. In a large saucepan on medium high heat, add olive oil and wait for it to shimmer. Add the fideos and cook until toasted and golden. Remove the fideos and set aside on a plate.
  2. Add more oil if needed and stir in the onion and bell pepper and cook until soft, about 5 minutes.
  3. Add the squid and cook for 3-4 minutes, occasionally stirring.
  4. Pour in the wine, bring to a boil, and wait for it to evaporate. Pour in the broth and crush the saffron threads and sprinkle into the broth.
  5. Return the noodles back into the pot, as well as the mussels and shrimp.
  6. Cook for 10 minutes, or until the pasta is al dente.
  7. Remove the fideua from the burner, cover (if using paella pan, use aluminum foil), and let it rest for 5 minutes.  

Notes

  • The fideo cooking time varies from brand to brand. You must check on the packaging to see how long it takes for your noodles to cook through.
  • Use a deep pan or paella pan: Fideuà is traditionally cooked in a deep pan or paella pan to allow the noodles to cook evenly and develop a crispy crust. Make sure your pan is deep enough to hold all the ingredients and allow room for stirring.
  • Cook the noodles al dente: To avoid mushy noodles, cook the fideos until they are al dente, which means they are cooked but still slightly firm to the bite.
  • Use high-quality ingredients: Fideuà is a simple dish that relies on the quality of the ingredients. Use fresh seafood, high-quality olive oil, and aromatic spices for the best flavor.
  • Sauté the onions and garlic first: Before adding the seafood and noodles, sauté the onions and garlic in olive oil until they are fragrant and slightly golden. This will enhance the flavor of the dish.
  • Add the seafood in stages: Start by adding the seafood that requires the longest cooking time, such as mussels, and then add the shrimp and squid later on. This will ensure that all the seafood is cooked perfectly.
  • Use homemade fish or seafood stock: Homemade stock has a richer flavor than store-bought stock and will give your fideuà a more authentic taste.
  • Don't stir the fideuà too much: Stirring the fideuà too much can break the noodles and cause them to become mushy. Only stir the fideuà when necessary to avoid this.
  • Let the fideuà rest before serving: Once the fideuà is cooked, let it rest for a few minutes to allow the flavors to meld together. This will result in a more flavorful dish.
