Description

This Tomato Gnocchi with Goat Cheese is made with gnocchi, goat cheese, tomato sauce, parsley and cooked to perfection. 


Ingredients

Scale
  • 3 tablespoons of olive oil
  • 4 cloves of garlic, smashed 
  • 1 pound of gnocchi 
  • 8 ounces of tomato sauce
  • 4 ounces of goat cheese
  • 2 tablespoons parsley, chopped
  • Parmesan, for topping

Instructions

  1. In a large pan on medium high heat, add oil and wait for it to shimmer. Toss in the garlic and toss until fragrant, about 1 minutes. Toss in the gnocchi and coat it in the oil. Toast the gnocchi, stirring frequently, for 3-4 minutes, until the color becomes a little darker. 
  2. Lower the heat to about medium heat and pour in the tomato sauce, salt, pepper, and goat cheese. Cook the gnocchi, stirring frequently, until the goat cheese melts. 
  3. Garnish the gnocchi with parsley and parmesan cheese. 

Notes

  • Make sure to lower the heat when adding the tomato sauce and goat cheese.
  • I do not recommend using homemade gnocchi as it will fall apart cooking it in the skillet. 
  • Blanch and shock the gnocchi: To prepare the gnocchi ahead of time or if you have leftovers, blanch them in boiling water for a minute or two until they float to the surface. Then transfer them to an ice bath to cool and stop the cooking process. Drain and toss with a little olive oil to prevent sticking. This method helps retain their shape and texture.

  • Use a slotted spoon: When removing the cooked gnocchi from boiling water, use a slotted spoon or spider strainer to avoid transferring excess water. This helps prevent the gnocchi from becoming soggy.

  • Add the goat cheese at the end: Incorporate the goat cheese into the tomato sauce or directly into the cooked gnocchi just before serving. This ensures the goat cheese retains its creamy texture and doesn't melt completely.

  • Adjust the seasoning: Taste the tomato sauce before adding the goat cheese and adjust the seasoning as needed. Add salt, pepper, or other herbs and spices to enhance the flavors of the dish.

  • Garnish with fresh herbs: Sprinkle freshly chopped herbs, such as parsley or basil, over the finished dish to add a pop of freshness and color.
