Chicken and Shrimp Fajitas

Description

These chicken and shrimp fajitas are deliciously cooked with homemade taco seasoning and served with flour tortillas, sour cream, limes, and guacamole.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 pound chicken breast or chicken thighs, sliced
  • 1 pound medium raw shrimp, peeled and deveined
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon oregano
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 1 pack flour tortillas, warmed

Instructions

  1. In a small bowl, add all the spices as well as salt and pepper. Mix well.
  2. In a large bowl, add the chicken and half of the seasoning and mix until coated. In another bowl, add the shrimp and the other half of the spices and mix until coated.
  3. In a large skillet on medium heat, add the oil and wait for it to shimmer. Add the chicken and cook until done, about 5-8 minutes. Remove and set aside. Add the peppers, onion and salt and cook until soft, about 5 minutes. Add the shrimp, cover and cook until the shrimp is cooked through, about 4-5 minutes.  Return the chicken and squeeze the lime onto the whole skillet and give everything a nice stir.
  4. Serve with tortillas, lime wedges, sour cream and/or guacamole.

Notes

Do not overcook the shrimp!
