Description

- 4 bolillo rolls or 1 baguette
- 1 can refried beans
- 1 package of mozzarella cheese
- 1 tomato, diced
- 1/4 red onion, diced
- 1/2 lime, juiced
- 1 teaspoon salt
Instructions
- Preheat the oven to 400 F. Line aluminum foil on a baking sheet.
- Spread the warmed refried beans on each piece of bread. Sprinkle cheese on the top and place in the oven for 10 minutes, or until the cheese melts.
- Meanwhile in a bowl, combine the diced tomatoes, diced onion, juice of 1/2 lime, and salt. This is your pico de gallo.
- Pull out the baked molletes and top with the pico de gallo.
