This Sun Dried Tomato and Bacon Salad is made with romaine lettuce, avocados, sliced almonds, provolone, and sun-dried tomatoes.
I absolutely love sun-dried tomatoes on everything. I recently made a Vodka Sauce that had sun-dried tomatoes that would pair very well with this salad.
How to make Sun Dried Tomato and Bacon Salad
Make the salad. Add the romaine lettuce, avocado, provolone and sliced almonds.
Make the vinaigrette. In a saucepan, cook the bacon and set aside on a pepper towel. In the same bacon grease, add the sun dried tomatoes, garlic, ½ lemon juice, vinegar, honey, mustard, red pepper flakes, salt and pepper.
Drizzle the ingredients over the salads and toss to coat.

Ingredients
- 6 cups of romaine lettuce, chopped
- 1 avocado
- ½ cup of sliced almonds
- ¼ cup of diced provolone
Bacon Vinaigrette
- ½ cup of sun-dried tomatoes
- 4 slices of cooked bacon, chopped
- 2 cloves of garlic, minced
- ½ a lemon, juiced
- 1 tablespoon of red wine vinegar
- 1 tablespoon of honey
- 1 teaspoon of honey mustard
- Pinch of crushed red pepper
- Salt and pepper, as needed
