This Strawberry Shortcake is made with flour, baking powder, vanilla, eggs, sugar, cream cheese, heavy cream, and strawberries.
This is a simple strawberry shortcake recipe for anyone celebrating a birthday or just simply wants to bake! This is a three layered cake with homemade frosting and strawberry jam.
I absolutely LOVE cream cheese but if you do not like cream cheese, I would skip the filling part of the recipe and use this filling.
What is the difference between strawberry shortcake and strawberry cheesecake?
Strawberry shortcake is made with a biscuit like dough, usually split in half with sliced strawberries in the middle and on top, served with whipped cream. Strawberry cheesecake is made with cream cheese and the strawberries are usually on top. This recipe sort of combines both!
How to make Strawberry Shortcake
Preheat the oven to 350F.
The vanilla cake is layered on top of each other so we will be baking each cake layer separately!
In a large bowl, whisk the baking powder, flour and salt together.
In a small pot, bring the butter and milk to a boil and immediately remove from heat. Add the vanilla.
In a separate bowl, using a stand mixer or hand mixer, beat the eggs and sugar on medium-high speed until the mixture thickens and it becomes a pale yellow color, about 5 minutes. Slowly drizzle the hot milk mixture while still beating. Then, beat in the flour mixture.
We only made a two layered cake, but feel free to make three! Line the bottoms of the three 8-inch cake pans with parchment paper and spray with non-stick spray as well. Add the batter into equal parts of the cake. Bake for 14-18 minutes until the edges are golden. Stick a fork into the center to see if anything sticks. Let the cakes cool to eventually take out of the pan. Let them sit until they cool.
Combine the strawberries and the jam and set aside for later. You can cut the strawberries into tiny pieces depending on how you would like to eat the cake. Do it however you like!
To make the frosting, combine the cream cheese, vanilla extract, powdered sugar, into a large mixing bowl and whisk on medium speed. While whisking, slowly add the heavy cream. Scrape the sides as you do this. Increase the speed until the cream can hold a stiff peak!
To assemble the cake, place one layer of the cake on a platter. Top with the whipped cream frosting and then top that with the strawberry mixture. Place another layer of cake and repeat. You can decorate the top of the cake with whole strawberries and cut up strawberries as you please!
Store the cake in the fridge to keep the frosting intact!
