Since lentils have a very earthy flavor, an earthy wine, like Merlot, would go well with this dish.
How to make Sausage and Lentils
Heat up 1 tablespoon of olive oil in a large saucepan on medium heat and add the chopped onion and salt and cook for about 4 minutes, until soft.
Add the lentils for 1 minute, stirring constantly and then add the chicken broth. Bring to a boil.
Add the spinach and cover for 30 minutes to 1 hour until all the liquid has evaporated.
When there is 15 minutes left before the lentils are done, in a separate pan, cook the sausage. Cover the pan with a film of oil and on medium heat, add the garlic and cook until fragrant. Then add the sausage and brown the sausage all over, about 5 minutes total. Add the white wine and ¼ cup of water, reduce heat to medium-low and cook for 15 minutes.
Place the lentils in a large bowl and with a slotted spoon, spoon the sausage on top of the lentils. Garnish with the chopped parsley.
