After cilantro, basil might my next favorite herb. Something about the smell of basil brings me to life. I love growing basil in my house especially because of the smell. This pesto recipe is simply delicious, the combination of the basil, lemon and parmesan makes your mouth water instantly. The best part about this recipe is that it is made in five minutes.
How to make Lemon Pesto in a Blender
Basil: The basil must be fresh or it won’t taste good. Go to your local grocery store and it should be in the produce section next to the other herbs. I recommend growing your own at home too!
Olive oil: Use extra-virgin olive oil- it needs to be the good quality olive oil.
Pine Nuts: Pine nuts can be expensive. You can use pistachios or almonds.
Parmesan: Parmesan can be freshly grated or already grated, your choice.
Lemon: Use a fresh lemon for the lemon juice, and not the store bought juice.
Garlic: Use fresh garlic for best results.
How to make this
In a blender, add basil, olive oil, nuts, garlic, parmesan, and salt. Cut the lemon in half and take out the seeds. Squeeze lemon and add juice into the blender. Blend until smooth.
