This Instant Pot Chili is made with ground beef, red kidney beans, tomatoes, onion, habaneros, and a packet of taco seasoning.

I rave about my instant pot to everyone I know. When I lived in New York City, it was so essential in my life because I was always on the go. When I would get home late at night and my meats were still frozen, I would stick it in the instant pot along with any other sauces and seasoning and would make the most delicious meals in under 30 minutes. It was a life saver!

This Instant Pot Chili was made in under 15 minutes, no joke! I am including prep and cooking time. On top of it, it is SO delicious. The taco seasoning mix will make or break the chili, so I would suggest using it.

Use the sauté function on the instant pot and add the butter until it melts. Add the habanero peppers and onion and sauté for 3 minutes, until softened. Add the garlic and ground beef and stir until brown, about 3 minutes. Keep scraping the bottom so nothing sticks. Hit cancel and add the canned of diced tomatoes, and all of the seasonings. Give it a good stir. Finally add the beans in but do not stir. Close the pot and pressure cook on high for 5 minutes.

Description

This Instant Pot Chili is made with ground beef, red kidney beans, tomatoes, onion, habaneros, and a packet of taco seasoning.

Ingredients

Scale
  • 1 ½ pounds of ground beef
  • 2 cans of red kidney beans
  • 2 cans diced Rotel tomatoes
  • 4 tablespoons salted butter
  • 1 medium yellow onion, diced
  • 2 habanero peppers, minced
  • 3 garlic cloves, minced
  • 1 packet taco seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cumin
  • 1 teaspoon dried cilantro
  • 1 teaspoon chili powder

Garnish

  • Shredded cheese
  • Sour cream

Instructions

  1. Use the sauté function on the instant pot and add the butter until it melts. Add the habanero peppers and onion and sauté for 3 minutes, until softened.
  2. Add the garlic and ground beef and stir until brown, about 3 minutes. Keep scraping the bottom so nothing sticks.
  3. Hit cancel and add the canned of diced tomatoes, and all of the seasonings. Give it a good stir. Finally add the beans in but do not stir. Close the pot and pressure cook on high for 5 minutes.

Notes

  • If the meat starts sticking to the bottom of the pan, I would pour the tomatoes in and scrape the bottom to take any bits off.
