This Easy Vegan Pesto is made with avocado, basil, pistachios, lemon, olive oil and salt and pepper and blended into perfection.

I have tried a handful of vegan recipes, and this is the best vegan pesto ever. This one is a winner! You can top this pesto on pasta, a salad or a sandwich. It is super versatile and can be made in under five minutes.

How to make Easy Vegan Pesto

Add the avocado, lemon, basil leaves, pistachios, olive oil in a blender and blend until smooth. Taste and add salt and pepper as desired. If you prefer a thinner consistency, slowly add 1 tablespoon of water and keep blending until your desired consistency.

This Easy Vegan Pesto is made with avocado, basil, pistachios, lemon, olive oil and salt and pepper.


Ingredients

Scale
  • 1 whole avocado
  • ½ tablespoon lemon
  • 1 cup of basil leaves
  • ½ cup pistachios
  • 1 teaspoon olive oil
  • Salt and pepper

Instructions

  1. Add the avocado, lemon, basil leaves, pistachios, olive oil in a blender and blend until smooth. Taste and add salt and pepper as desired.
  2. If you prefer a thinner consistency, slowly add 1 tablespoon of water and keep blending until your desired consistency. 

Notes

  • Taste and adjust to your palate! If you prefer a more sour pesto, add more lemon. If you prefer more salt, add more salt. 
  • To make a thinner consistency, add more olive oil and water.
