I have tried a handful of vegan recipes, and this is the best vegan pesto ever. This one is a winner! You can top this pesto on pasta, a salad or a sandwich. It is super versatile and can be made in under five minutes.
How to make Easy Vegan Pesto
Add the avocado, lemon, basil leaves, pistachios, olive oil in a blender and blend until smooth. Taste and add salt and pepper as desired. If you prefer a thinner consistency, slowly add 1 tablespoon of water and keep blending until your desired consistency.
