This Cheesy Mashed Cauliflower is made with riced cauliflower, butter, heavy cream, parmesan and blended or mashed into perfection. It is a great dish for a ketogenic diet and pairs well with a ton of dishes. Bold statement but it is just good as mashed potatoes. You can mash it with a fork for a thicker consistency or blend it for a thinner consistency.

How to make Cheesy Mashed Cauliflower
Melt the butter in a medium sized skillet over medium heat. Put the cauliflower in the skillet and cook, stirring occasionally, until tender, about 15 minutes. Add salt and pepper. Turn the heat off and stir in the parmesan and cream. Add the mixture in a blender and blend until smooth. For thicker consistency, mash with a fork.
