These Cheese Stuffed Jalapeños are made with jalapeños, cream cheese, cheddar cheese, garlic, sun-dried tomatoes, and salt.
This is a great side dish if you are eating Mexican food and you need to spice up your life! You should either bake or grill for 20-30 minutes.
How to make Cheese Stuffed Jalapeños
Preheat grill to medium. Cut off tops of each jalapeño pepper and core the pepper, removing all the seeds. If you do not have a jalapeño corer, use a vegetable peeler. I would also used gloves as the oil from the jalapeños can be harmful, especially if you touch your face or eyes afterward. Place peppers upright on the jalapeño roaster.
In a bowl, mix the cream cheese, cheddar cheese, garlic, sun-dried tomatoes, salt and pepper. With you hand, place the mixture into the jalapeño peppers. I used the back of a spoon or a fork to push the cheese farther into the jalapeno.
Grill the peppers for about 20-30 minutes. I took it out around 20 minutes and the jalapeños was very spicy. After 30 minutes, it was crisper and less spicy.
