I absolutely love mashed potatoes, especially with cheese. It is a great dish for a ketogenic diet and pairs well with a ton of dishes. Bold statement but it is just good as mashed potatoes. You can mash it with a fork for a thicker consistency or blend it for a thinner consistency. Mashed potatoes unfortunately have a ton of carbs. I started this ketogenic diet about a week ago and I can already tell I have lost weight. It is so exciting!
After the first 3 days, I was craving carbs but I finally pulled through and I think I have turned over. My body is now running on fat.
How to make Cauliflower Mashed Potatoes Keto
Melt the butter in a medium sized skillet over medium heat. Put the cauliflower in the skillet and cook, stirring occasionally, until tender, about 15 minutes. Add salt and pepper. Turn the heat off and stir in the parmesan and cream. Add the mixture in a blender and blend until smooth. For thicker consistency, mash with a fork.
